Focus on having a stable pantry of items and learn to cook with them, then as you can you supplement or replace them with fresh stuff. Have your starches as a base of the meal, rice, pasta, noodles, potatoes... other stuff like cornmeal and flour too can go here. Onions and garlic as well. Then you can have quick stuff to serve with them. Jarred sauces like tomato sauce, or curry, bricks of japanese curry, ready made stir fry sauce, canned stews etc... Condiments of course too, hot sauces and spices to add variety, and a few snacks and treats too of course! Then you have the freezer which you can use for all sorts of things, but focus on protein and veg to round out the pantry stuff. Bagged frozen veg, frozen fish, frozen ground meat all cooks quickly and well from frozen. Then you can easily throw together a meal with your staples. Some protein from the freezer, a jarred sauce from the pantry or fridge, and some starch from your pantry with maybe some extra condiments or spices. Long lasting stuff in the fridge like jams and pickles and cheese and salami/coldcuts might also be considered staples. A little plate of crackers and cheese and pickles can be just fine when you need a meal in a few minutes. Similarly a fruit bowl of longer lasting fruit like apples is a good idea. Try to keep a ready stock of all of these staples, then supplement with fresh stuff. Have some extra time? Make your sauce or stir fry with fresh vegetables. Able to meal prep? Make a big batch of cooked chicken thighs for the freezer. Have time for a grocery run? Get what you want for some salads. If you keep it stocked then you have your pantry to always bounce back on, and you supplement it when you have time and willpower. If you want to lose weight, use the amount of starch you eat as the first lever, and try to replace with more vegetables.

Batch cook and freeze things. Stuff that freezes well: meatloaf, enchiladas, lasagna/pasta bake, any kind of rice-based dish, breakfast casseroles, burritos, sauces. Freeze your sauces in individual portions, laying flat in Ziploc bags so they thaw in just a few minutes under hot water. Panang curry is one of my favorites because you can put it over anything. Rice, quinoa, cauliflower rice, sweet potatoes, canned chickpeas, tofu, leftover chicken, the list goes on. For the next few weeks, dedicate one day a week to making one or two big batches of meals. Portion them out and freeze them. You'll build up a really nice rotation of frozen meals so you're not eating the same thing over and over. Get the steam-in-the-bag veggies from the produce section of the store. All you have to do is puncture and microwave. I would defrost some meatloaf and then microwave some broccoli and have a healthy home-cooked meal in like 5 minutes. Get appliances. I live alone, so my issue is really just not wanting to make a big production for just myself. My instant pot, air fryer, and rice cooker live on my countertop and are constantly in use. I do crispy air-fried tofu (press, cube, season, toss in corn starch, hit with a spray of oil, pop in the air fryer) with 50/50 rice/quinoa (cooks perfectly mixed together in the rice cooker) and steamed broccoli (instant pot with a steamer basket) and Thai sweet chili sauce on top. Aside from cubing the tofu and chopping up a broccoli crown, there's nothing for me to do. They all cook at the same time in different appliances, so the "cooking time" is really just me waiting around for them to be done.
